One of my favorite things about summer is the wonderfully fresh and delicious produce that’s available. This past weekend, the hubs and I frequented our favorite farmer’s market and I couldn’t resist the allure of a basket of fresh peaches. I had already had cobbler on my mind for the past few weeks and since I knew it’d be a bit of a challenge for two people to eat an entire basket of peaches, the decision was clear (!). I followed this recipe loosely, substituting the peaches in for cherries. I also added a touch of vanilla, brown sugar, and cinnamon to the sliced peaches before pouring them into the ramekins. We ate ours warm from the oven with a scoop of vanilla ice cream.
