Cranberry Grapefruit Mojito

Orlando summers are always hot, but for some reason, this past week seemed a bit more stifling than usual. So, when I came across this recipe, I couldn’t think of anything that sounded better than a light, refreshing citrus cocktail. I loosely followed the recipe, adding sparkling cranberry juice, lime flavored sparkling water, and substituting a squeeze of orange honey for the agave. This drink was the perfect compliment to a warm Saturday evening.

Tuesday Three

Sometimes, we all just need a little break. Between work, school, interning, and assisting in one of the labs on campus; I can tell you that I was more than ready for one. My husband and I joined his family at the beach, on the east coast of Florida, for a little R&R. We were lucky enough to enjoy wonderful weather, delicious meals, and a few glasses of wine in the summer breeze, all in fantastic company. Sometimes, a little a break is all it takes to put everything back into perspective. I hope you all had a wonderful 4th and were able to steal just a bit of time for yourself to recharge.

Simple Peach Cobbler

One of my favorite things about summer is the wonderfully fresh and delicious produce that’s available. This past weekend, the hubs and I frequented our favorite farmer’s market and I couldn’t  resist the allure of a basket of fresh peaches. I had already had cobbler on my mind for the past few weeks and since I knew it’d be a bit of a challenge for two people to eat an entire basket of peaches, the decision was clear (!). I followed this recipe loosely, substituting the peaches in for cherries. I also added a touch of vanilla, brown sugar, and cinnamon to the sliced peaches before pouring them into the ramekins. We ate ours warm from the oven with a scoop of vanilla ice cream. If you’re looking for a simple and classic summer recipe that can be easily adapted to include your favorites, I strongly urge you to give this one a try.
